Baguette gefüllt nach mediteraner Art
(Zutaten für 4 Personen)
Zutaten:
Brotteig:
250 g glattes Mehl
5 g Trockengerm
3 EL Olivenöl
Salz, Oregano, Wasser
Fülle:
40 g in Öl eingelegte Tomaten
1 Glas in Öl eingelegte Paprika
1 Kugel Mozarella
40 g Rucola
10 frische Blätter Basilikum
frisch gehobelter Parmesan
Zubereitung:
Alle Zutaten rasch zu einem glatten Teig anwirken (verarbeiten). Den Brotteig einmal aufgehen lassen. Den Teig zusammen kneten und dünn ausrollen. Mozarella in Scheiben schneiden, Tomaten und Paprika abseihen. Alle Zutaten in der Mitte des Teiges, beginnend mit dem Mozarella, belegen und zusammenrollen. Mit Olivenöl einstreichen und auf dem vorgeheizten Brotbackstein indirekt bei 200 °C ca. 20 Minuten grillen. Brot heraus nehmen, überkühlen lassen, aufschneiden und servieren.
TIPP: Die Qualität des Olivenöls beeinflusst das Aroma entscheidend!
